Sutlach (creamy Rice Pudding)
Sutlach is a creamy rice pudding that is a beloved dessert in Bukharan Jewish cuisine. It is a comforting and delicious treat that is perfect for any occasion.
Ingredients
- 1 cup short-grain rice
- 4 cups whole milk
- 1/2 cup sugar
- 1/4 teaspoon salt
- 1 teaspoon rose water
- 1/4 cup chopped almonds, for garnish
- 1/4 cup chopped pistachios, for garnish
Instructions
- In a large pot, combine the rice and milk. Bring to a boil over medium heat, then reduce the heat to low and simmer for 30 minutes, stirring occasionally.
- Add the sugar and salt to the pot and continue to simmer for another 20-30 minutes, or until the rice is very soft and the mixture has thickened.
- Stir in the rose water and remove the pot from the heat.
- Divide the sutlach among serving bowls and garnish with chopped almonds and pistachios.
- Let the sutlach cool to room temperature, then refrigerate for at least 2 hours before serving.
