Suya (grilled Beef Skewers With Peanut Sauce)
Suya is a popular West African street food that consists of grilled beef skewers coated in a spicy peanut sauce. This flavorful dish is a staple in Malian cuisine and is perfect for a summer barbecue or a casual gathering with friends and family.
Ingredients
- 1.5 lbs beef sirloin, thinly sliced
- 1/4 cup groundnut oil (or peanut oil)
- 2 tbsp ground cayenne pepper
- 1 tbsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 cup roasted peanuts, finely ground
- 1/4 cup finely chopped red onion
- 1/4 cup chopped fresh cilantro
- Salt to taste
- 8 wooden skewers, soaked in water
Instructions
- In a bowl, combine the groundnut oil, cayenne pepper, paprika, garlic powder, and onion powder to make the marinade.
- Add the thinly sliced beef to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, or overnight for best results.
- Preheat the grill to medium-high heat.
- Thread the marinated beef slices onto the soaked skewers.
- Grill the beef skewers for 3-4 minutes on each side, or until cooked to your desired level of doneness.
- In a separate bowl, combine the ground roasted peanuts, chopped red onion, cilantro, and salt to make the peanut sauce.
- Serve the grilled beef skewers with the peanut sauce on the side for dipping.
