Suya Quesadillas

Ingredients

  • 1 lb boneless chicken, thinly sliced
  • 2 tbsp suya spice
  • 4 large flour tortillas
  • 2 cups shredded cheese
  • 1/2 cup sliced onions
  • 1/2 cup sliced bell peppers
  • 1/4 cup vegetable oil
  • Salt to taste

Instructions

  1. Season the chicken with suya spice and salt, then grill or pan-fry until cooked through.
  2. Place a tortilla on a flat surface and sprinkle with a layer of cheese.
  3. Top with the cooked chicken, onions, and bell peppers, then add another layer of cheese.
  4. Place another tortilla on top to cover the filling.
  5. Heat a skillet over medium heat and add a drizzle of vegetable oil.
  6. Carefully transfer the assembled quesadilla to the skillet and cook until the bottom is golden and crispy.
  7. Flip the quesadilla and cook the other side until golden and the cheese is melted.
  8. Remove from the skillet and let it cool for a minute before slicing into wedges.
