Svenska Pepparkakor (swedish Gingerbread Cookies)

Ingredients

  • 3 1/2 cups all-purpose flour
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup molasses
  • 1/4 cup water

Instructions

  1. In a bowl, whisk together the flour, ginger, cinnamon, cloves, baking soda, and salt.
  2. In a separate large bowl, beat the butter and sugar together until creamy. Add the molasses and water, and mix until combined.
  3. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  4. Divide the dough in half, wrap each half in plastic wrap, and refrigerate for at least 1 hour.
  5. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  6. Roll out the dough on a floured surface to about 1/8 inch thickness. Use cookie cutters to cut out shapes and place them on the prepared baking sheets.
  7. Bake for 8-10 minutes, or until the edges are slightly darker. Let the cookies cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
