Swabian Apple Strudel (Schwäbischer Apfelstrudel)
Schwäbischer Apfelstrudel, or Swabian Apple Strudel, is a traditional dessert from the Baden cuisine of Germany. This delicious pastry is filled with sweet apples, raisins, and warm spices, then wrapped in a flaky, buttery crust. It's the perfect treat for any occasion, especially when served warm with a dollop of whipped cream or a scoop of vanilla ice cream.
Ingredients
- 6 large apples, peeled, cored, and thinly sliced
- 1/2 cup granulated sugar
- 1/2 cup raisins
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup breadcrumbs
- 1/2 cup unsalted butter, melted
- 10 sheets phyllo dough
- 1/2 cup bread crumbs
- 1/2 cup unsalted butter, melted
- 1/2 cup powdered sugar, for dusting
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the sliced apples, granulated sugar, raisins, cinnamon, nutmeg, and salt. Set aside.
- Place one sheet of phyllo dough on a clean work surface and brush it lightly with melted butter. Sprinkle with breadcrumbs.
- Repeat the process with the remaining phyllo sheets, stacking them on top of each other.
- Spoon the apple mixture along one long edge of the phyllo stack, leaving a border on the sides. Fold the short edges over the filling, then roll up the strudel from the long edge, using the parchment paper to help lift and roll.
- Transfer the strudel to a baking sheet, seam side down. Brush the top with melted butter.
- Bake for 40-45 minutes, or until the strudel is golden brown and the apples are tender.
- Remove from the oven and let it cool for a few minutes before dusting with powdered sugar.
- Slice and serve the Schwäbischer Apfelstrudel warm, and enjoy!
