This delicious pastry is filled with sweet apples, raisins, and warm spices, then wrapped in a flaky, buttery crust. Swabian Apple Strudel (Schwäbischer Apfelstrudel)

Ingredients

  • 6 large apples, peeled, cored, and thinly sliced
  • 1/2 cup granulated sugar
  • 1/2 cup raisins
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup breadcrumbs
  • 1/2 cup unsalted butter, melted
  • 10 sheets phyllo dough
  • 1/2 cup bread crumbs
  • 1/2 cup unsalted butter, melted
  • 1/2 cup powdered sugar, for dusting

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the sliced apples, granulated sugar, raisins, cinnamon, nutmeg, and salt. Set aside.
  3. Place one sheet of phyllo dough on a clean work surface and brush it lightly with melted butter. Sprinkle with breadcrumbs.
  4. Repeat the process with the remaining phyllo sheets, stacking them on top of each other.
  5. Spoon the apple mixture along one long edge of the phyllo stack, leaving a border on the sides. Fold the short edges over the filling, then roll up the strudel from the long edge, using the parchment paper to help lift and roll.
  6. Transfer the strudel to a baking sheet, seam side down. Brush the top with melted butter.
  7. Bake for 40-45 minutes, or until the strudel is golden brown and the apples are tender.
  8. Remove from the oven and let it cool for a few minutes before dusting with powdered sugar.
  9. Slice and serve the Schwäbischer Apfelstrudel warm, and enjoy!
