Swabian Cabbage Rolls (Schwäbische Krautwickel)

Ingredients
- 1 head of green cabbage
- 1 pound ground pork
- 1/2 cup uncooked rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon caraway seeds
- Salt and pepper to taste
- 3 cups beef or vegetable broth
Instructions
- Bring a large pot of salted water to a boil. Carefully remove the outer leaves of the cabbage, then blanch them in the boiling water for 2-3 minutes, or until softened. Remove and set aside.
- In a mixing bowl, combine the ground pork, uncooked rice, chopped onion, minced garlic, paprika, caraway seeds, salt, and pepper. Mix until well combined.
- Place a spoonful of the meat mixture onto each cabbage leaf, then roll them up, tucking in the sides as you go.
- Place the cabbage rolls seam-side down in a large pot. Pour the broth over the rolls, then bring to a simmer over medium heat.
- Cover and simmer for 45-50 minutes, or until the cabbage is tender and the filling is cooked through.
- Serve the Schwäbische Krautwickel hot, spooning some of the broth over the top as a flavorful sauce.
