Swabian Cabbage Rolls (Schwäbische Krautwickel)

Ingredients

  • 1 head of green cabbage
  • 1 pound ground pork
  • 1/2 cup uncooked rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon caraway seeds
  • Salt and pepper to taste
  • 3 cups beef or vegetable broth

Instructions

  1. Bring a large pot of salted water to a boil. Carefully remove the outer leaves of the cabbage, then blanch them in the boiling water for 2-3 minutes, or until softened. Remove and set aside.
  2. In a mixing bowl, combine the ground pork, uncooked rice, chopped onion, minced garlic, paprika, caraway seeds, salt, and pepper. Mix until well combined.
  3. Place a spoonful of the meat mixture onto each cabbage leaf, then roll them up, tucking in the sides as you go.
  4. Place the cabbage rolls seam-side down in a large pot. Pour the broth over the rolls, then bring to a simmer over medium heat.
  5. Cover and simmer for 45-50 minutes, or until the cabbage is tender and the filling is cooked through.
  6. Serve the Schwäbische Krautwickel hot, spooning some of the broth over the top as a flavorful sauce.
