Swabian Cheese and Ham Stuffed Zucchini (Schwäbische Käse-Schinken-Gefüllte Zucchini)

Ingredients

  • 4 medium zucchinis
  • 200g sliced ham
  • 200g shredded Emmental cheese
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the seeds to create a hollow center.
  3. In a pan, sauté the onion and garlic in olive oil until softened.
  4. Remove the pan from heat and stir in the ham and half of the shredded cheese.
  5. Fill the hollowed-out zucchinis with the ham and cheese mixture.
  6. Sprinkle the remaining cheese on top of the filled zucchinis.
  7. Bake in the preheated oven for 20-25 minutes, or until the zucchinis are tender and the cheese is melted and golden brown.
  8. Season with salt and pepper to taste before serving.
