Swabian Cheese and Spinach Stuffed Mushrooms (Schwäbische Käse-Spinat-Gefüllte Pilze)

Ingredients

  • 12 large mushrooms, stems removed and reserved
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups fresh spinach, chopped
  • 1/2 cup breadcrumbs
  • 1/2 cup shredded Swiss cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a skillet, heat the olive oil over medium heat. Add the chopped mushroom stems, onion, and garlic. Cook until the vegetables are soft, about 5 minutes.
  2. Add the chopped spinach to the skillet and cook until wilted, about 2 minutes. Remove from heat and let cool.
  3. Preheat the oven to 375°F (190°C).
  4. In a bowl, combine the cooked vegetables, breadcrumbs, Swiss cheese, and Parmesan cheese. Season with salt and pepper.
