Ingredients
- 12 large mushrooms, stems removed and reserved
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 cups fresh spinach, chopped
- 1/2 cup breadcrumbs
- 1/2 cup shredded Swiss cheese
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- In a skillet, heat the olive oil over medium heat. Add the chopped mushroom stems, onion, and garlic. Cook until the vegetables are soft, about 5 minutes.
- Add the chopped spinach to the skillet and cook until wilted, about 2 minutes. Remove from heat and let cool.
- Preheat the oven to 375°F (190°C).
- In a bowl, combine the cooked vegetables, breadcrumbs, Swiss cheese, and Parmesan cheese. Season with salt and pepper.
- Stuff each mushroom cap with the cheese and spinach mixture and place them on a baking sheet.
- Bake in the preheated oven for 20 minutes, or until the mushrooms are tender and the filling is golden brown.
