Swabian Cheese Spaetzle (Schwäbische Käsespätzle)
Schwäbische Käsespätzle, or Swabian Cheese Spaetzle, is a classic dish from the Baden cuisine of Germany. This hearty and comforting meal features soft egg noodles topped with caramelized onions and plenty of melted cheese, making it a favorite for both weeknight dinners and special occasions.
Ingredients
- 2 cups all-purpose flour
- 4 large eggs
- 1/2 cup milk
- 1/2 tsp salt
- 1/4 tsp nutmeg
- 1/2 cup grated Emmental cheese
- 1/2 cup grated Gruyère cheese
- 4 tbsp butter
- 2 large onions, thinly sliced
Instructions
- In a large mixing bowl, combine the flour, eggs, milk, salt, and nutmeg to form a smooth, thick batter.
- Bring a large pot of salted water to a boil. Using a spaetzle maker or colander, press the batter through the holes into the boiling water.
- Cook the spaetzle for 2-3 minutes or until they float to the surface, then remove them with a slotted spoon and transfer to a colander to drain.
- Preheat the oven to 350°F (175°C). In a large ovenproof skillet, melt 2 tablespoons of butter over medium heat and add the sliced onions. Cook, stirring occasionally, until the onions are caramelized, about 10-15 minutes.
- Add the cooked spaetzle to the skillet with the onions and stir to combine. Sprinkle the grated cheeses over the top and place the skillet in the oven.
- Bake for 10-15 minutes or until the cheese is melted and bubbly. Serve hot and enjoy!
