Swabian Lentil Soup (Schwäbische Linsensuppe)
Schwäbische Linsensuppe, or Swabian Lentil Soup, is a traditional dish from the Baden cuisine of Germany. This hearty and flavorful soup is perfect for a cozy meal, especially during the colder months.
Ingredients
- 1 cup green or brown lentils
- 4 cups vegetable broth
- 1 onion, finely chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 bay leaf
- 1 tsp dried thyme
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Rinse the lentils under cold water and drain.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Cook until the vegetables are soft, about 5 minutes.
- Add the minced garlic, thyme, and bay leaf. Cook for another 2 minutes.
- Pour in the vegetable broth and add the lentils. Bring the soup to a boil, then reduce the heat and simmer for 45-50 minutes, or until the lentils are tender.
- Season with salt and pepper to taste. Remove the bay leaf before serving.
