Swabian Potato Salad (Schwäbischer Kartoffelsalat)

Ingredients

  • 1 kg potatoes, boiled and sliced
  • 1 onion, finely chopped
  • 200 ml beef broth
  • 100 ml white wine vinegar
  • 2 tbsp sugar
  • 100 g bacon, diced and fried
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes until tender, then slice them and place in a large bowl.
  2. Add the chopped onion to the bowl.
  3. In a small saucepan, heat the beef broth, white wine vinegar, and sugar until the sugar is dissolved.
  4. Pour the warm dressing over the potatoes and onions, and toss gently to combine.
  5. Add the fried bacon to the salad and season with salt and pepper to taste.
  6. Allow the salad to marinate for at least 30 minutes before serving.
