Ingredients
- 1.5 lbs beef stew meat, cut into chunks
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1-inch ginger, grated
- 2 tomatoes, diced
- 1 can (14 oz) coconut milk
- 2 cups beef broth
- 2 tbsp tomato paste
- 2 tbsp vegetable oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/2 tsp cinnamon
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened.
- Add the garlic, ginger, and spices to the pot. Stir and cook for 1-2 minutes until fragrant.
- Add the beef chunks to the pot and brown on all sides.
- Stir in the tomato paste, diced tomatoes, coconut milk, and beef broth. Season with salt and pepper.
- Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender.
