Ingredients

  • 1.5 lbs beef stew meat, cut into chunks

  • 1-inch ginger, grated
  • 2 tomatoes, diced
  • 1 can (14 oz) coconut milk
  • 2 cups beef broth
  • 2 tbsp tomato paste
  • 2 tbsp vegetable oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/2 tsp cinnamon
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened.
  2. Add the garlic, ginger, and spices to the pot. Stir and cook for 1-2 minutes until fragrant.
  3. Add the beef chunks to the pot and brown on all sides.
  4. Stir in the tomato paste, diced tomatoes, coconut milk, and beef broth. Season with salt and pepper.
  5. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender.
