Ingredients
- 1 whole chicken, cut into pieces
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tablespoon ginger, grated
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon turmeric
- 1 can (14 oz) coconut milk
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is soft and translucent.
- Add the chicken pieces to the pot and brown them on all sides.
- Stir in the ground coriander, cumin, and turmeric, coating the chicken evenly with the spices.
- Pour in the coconut milk and season with salt and pepper. Bring the mixture to a simmer, then cover and cook for 20-25 minutes, or until the chicken is cooked through.
- Garnish with fresh cilantro and serve hot with rice or flatbread.
