Ingredients

  • 1 whole chicken, cut into pieces
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • 1 can (14 oz) coconut milk
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is soft and translucent.
  2. Add the chicken pieces to the pot and brown them on all sides.
  3. Stir in the ground coriander, cumin, and turmeric, coating the chicken evenly with the spices.
  4. Pour in the coconut milk and season with salt and pepper. Bring the mixture to a simmer, then cover and cook for 20-25 minutes, or until the chicken is cooked through.
  5. Garnish with fresh cilantro and serve hot with rice or flatbread.
