Swahili Coconut Curry Mussels

Ingredients
- 2 lbs fresh mussels, cleaned and debearded
- 1 tbsp vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tbsp ginger, grated
- 2 tomatoes, diced
- 1 can (14 oz) coconut milk
- 1 tbsp curry powder
- 1 tsp turmeric
- 1/2 tsp cumin
- 1/2 tsp coriander
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is soft and translucent.
- Stir in the diced tomatoes and cook for 2-3 minutes.
- Pour in the coconut milk and add the curry powder, turmeric, cumin, and coriander. Season with salt and pepper.
- Bring the sauce to a gentle simmer, then add the cleaned mussels to the pot.
- Cover and cook for 5-7 minutes, or until the mussels have opened up.
- Discard any mussels that have not opened. Serve the curry mussels in bowls, garnished with fresh cilantro.
