Swahili Coconut Curry Mussels

Ingredients

  • 2 lbs fresh mussels, cleaned and debearded
  • 1 tbsp vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 2 tomatoes, diced
  • 1 can (14 oz) coconut milk
  • 1 tbsp curry powder
  • 1 tsp turmeric
  • 1/2 tsp cumin
  • 1/2 tsp coriander
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is soft and translucent.
  3. Stir in the diced tomatoes and cook for 2-3 minutes.
  4. Pour in the coconut milk and add the curry powder, turmeric, cumin, and coriander. Season with salt and pepper.
  5. Bring the sauce to a gentle simmer, then add the cleaned mussels to the pot.
  6. Cover and cook for 5-7 minutes, or until the mussels have opened up.
  7. Discard any mussels that have not opened. Serve the curry mussels in bowls, garnished with fresh cilantro.
