Ingredients

  • 1 lb large prawns, peeled and deveined
  • 2 cups coconut milk
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 2 tomatoes, diced
  • 1 green bell pepper, sliced
  • Salt to taste
  • 2 tbsp vegetable oil

Instructions

  1. Heat vegetable oil in a pan over medium heat.
  2. Add chopped onion and minced garlic, sauté until fragrant.
  3. Sprinkle turmeric, cumin, and chili powder, stir for a minute.
  4. Pour in coconut milk, bring to a gentle simmer.
  5. Add diced tomatoes and sliced bell pepper, cook for 5 minutes.
  6. Add prawns, season with salt, and cook for 5-7 minutes until prawns are pink and cooked through.
  7. Serve hot with steamed rice or crusty bread.
