Ingredients

  • 500g mixed seafood (such as prawns, mussels, and fish fillets)
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 potatoes, peeled and diced
  • 2 cups fish or vegetable stock
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent.
  2. Add the diced potatoes to the pot and pour in the fish or vegetable stock. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the potatoes are tender.
  3. Stir in the mixed seafood and cook for an additional 5-7 minutes, or until the seafood is cooked through.
  4. Pour in the heavy cream and season the chowder with salt and pepper to taste. Let it simmer for another 5 minutes.
  5. Remove the chowder from the heat and ladle it into serving bowls. Garnish with chopped fresh parsley before serving.
