Ingredients
- 500g mixed seafood (such as prawns, mussels, and fish fillets)
- 2 tablespoons olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 2 potatoes, peeled and diced
- 2 cups fish or vegetable stock
- 1 cup heavy cream
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent.
- Add the diced potatoes to the pot and pour in the fish or vegetable stock. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the potatoes are tender.
- Stir in the mixed seafood and cook for an additional 5-7 minutes, or until the seafood is cooked through.
- Pour in the heavy cream and season the chowder with salt and pepper to taste. Let it simmer for another 5 minutes.
- Remove the chowder from the heat and ladle it into serving bowls. Garnish with chopped fresh parsley before serving.
