Svensk Kål- och Potatissoppa, or Swedish Cabbage and Potato Soup, is a comforting and hearty dish that is perfect for a cold winter day. This traditional Swedish soup is easy to make and packed with wholesome ingredients.
Ingredients
- 1 small head of cabbage, shredded
- 4 potatoes, peeled and diced
- 1 onion, finely chopped
- 2 carrots, diced
- 6 cups vegetable broth
- 1 bay leaf
- Salt and pepper to taste
- 1/2 cup heavy cream (optional)
Instructions
- In a large pot, sauté the onion in a little oil until translucent.
- Add the cabbage, potatoes, and carrots to the pot and cook for 5 minutes, stirring occasionally.
- Pour in the vegetable broth and add the bay leaf. Bring to a boil, then reduce the heat and simmer for 20-25 minutes, or until the vegetables are tender.
- Season with salt and pepper to taste. If using, stir in the heavy cream just before serving.
