Swedish Cabbage and Potato Soup (Svensk Kål- och Potatissoppa)

Ingredients

  • 1 small head of cabbage, shredded
  • 4 potatoes, peeled and diced
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 6 cups vegetable broth
  • 1 bay leaf
  • Salt and pepper to taste
  • 1/2 cup heavy cream (optional)

Instructions

  1. In a large pot, sauté the onion in a little oil until translucent.
  2. Add the cabbage, potatoes, and carrots to the pot and cook for 5 minutes, stirring occasionally.
  3. Pour in the vegetable broth and add the bay leaf. Bring to a boil, then reduce the heat and simmer for 20-25 minutes, or until the vegetables are tender.
