Swedish Cabbage Rolls (Svenska kåldolmar)

Ingredients

  • 1 head of cabbage
  • 1 pound ground beef
  • 1/2 cup uncooked rice
  • 1 onion, finely chopped
  • 1 egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon allspice
  • 2 cups beef broth
  • 1 cup tomato sauce

Instructions

  1. Bring a large pot of water to a boil. Carefully remove the outer leaves of the cabbage and blanch them in the boiling water for 2-3 minutes. Remove and set aside to cool.
  2. In a mixing bowl, combine the ground beef, rice, onion, egg, salt, pepper, and allspice. Mix until well combined.
  3. Place a spoonful of the meat mixture onto each cabbage leaf and roll up, tucking in the sides to enclose the filling.
  4. In a large pot, arrange the cabbage rolls in a single layer. Pour the beef broth and tomato sauce over the rolls. Cover and simmer for 1 hour, or until the cabbage is tender and the filling is cooked through.
