Ingredients

  • 500g boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1/2 cup cornstarch
  • 2 eggs, beaten
  • 1 cup vegetable oil for frying
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 onion, cut into chunks
  • 1/2 cup pineapple chunks
  • 3/4 cup granulated sugar
  • 1/2 cup rice vinegar
  • 3 tablespoons ketchup
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 2 tablespoons cornstarch mixed with 3 tablespoons water

Instructions

  1. In a bowl, mix the chicken pieces with cornstarch until coated, then dip them in beaten eggs.
  2. Heat the vegetable oil in a wok or large skillet over medium-high heat. Fry the chicken until golden brown and cooked through. Remove and drain on paper towels.
  3. In a separate pan, combine the sugar, rice vinegar, ketchup, soy sauce, and sesame oil. Bring to a boil, then add the cornstarch mixture and stir until thickened.
  4. Add the bell peppers, onion, and pineapple to the sauce, then add the cooked chicken. Stir until everything is well coated and heated through.
