Ingredients
- 500g boneless, skinless chicken thighs, cut into bite-sized pieces
- 1/2 cup cornstarch
- 2 eggs, beaten
- 1 cup vegetable oil for frying
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 onion, cut into chunks
- 1/2 cup pineapple chunks
- 3/4 cup granulated sugar
- 1/2 cup rice vinegar
- 3 tablespoons ketchup
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 2 tablespoons cornstarch mixed with 3 tablespoons water
Instructions
- In a bowl, mix the chicken pieces with cornstarch until coated, then dip them in beaten eggs.
- Heat the vegetable oil in a wok or large skillet over medium-high heat. Fry the chicken until golden brown and cooked through. Remove and drain on paper towels.
- In a separate pan, combine the sugar, rice vinegar, ketchup, soy sauce, and sesame oil. Bring to a boil, then add the cornstarch mixture and stir until thickened.
- Add the bell peppers, onion, and pineapple to the sauce, then add the cooked chicken. Stir until everything is well coated and heated through.
- Serve the sweet and sour chicken hot with steamed rice.
