Ingredients
- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1/2 cup cornstarch
- 2 eggs, beaten
- 1 cup pineapple chunks
- 1 green bell pepper, cut into chunks
- 1 red bell pepper, cut into chunks
- 1 cup sugar
- 1/2 cup vinegar
- 1/4 cup ketchup
- 1 tablespoon soy sauce
- 1 teaspoon garlic powder
- 1/4 cup vegetable oil
Instructions
- In a bowl, coat the chicken pieces with cornstarch, then dip them into the beaten eggs.
- Heat the vegetable oil in a large skillet over medium-high heat. Fry the coated chicken pieces until they are golden brown and fully cooked. Remove the chicken from the skillet and set aside.
- In the same skillet, combine the pineapple chunks, green and red bell peppers, sugar, vinegar, ketchup, soy sauce, and garlic powder. Cook and stir until the sauce thickens and the vegetables are tender-crisp.
- Add the cooked chicken back to the skillet and stir to coat the chicken with the sweet and sour sauce.
- Serve the sweet and sour chicken over steamed rice.
