Ingredients

  • 4 fillets of white fish (such as cod or tilapia)
  • 1/2 cup cornstarch
  • 2 eggs, beaten
  • 1 cup pineapple chunks
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 onion, cut into chunks
  • 3/4 cup granulated sugar
  • 1/2 cup rice vinegar
  • 1/4 cup ketchup
  • 3 tablespoons soy sauce
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
  • Vegetable oil for frying
  • Salt and pepper to taste

Instructions

  1. Pat the fish fillets dry with paper towels and season with salt and pepper.
  2. Dredge the fish in cornstarch, then dip in the beaten eggs, shaking off any excess.
  3. Heat vegetable oil in a large skillet over medium-high heat. Fry the fish fillets until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
  4. In a separate pan, combine the sugar, rice vinegar, ketchup, and soy sauce. Bring to a simmer over medium heat.
  5. Add the pineapple, bell peppers, and onion to the sauce, and cook for 2-3 minutes until the vegetables are slightly softened.
  6. Stir in the cornstarch slurry and cook until the sauce thickens.
  7. Add the fried fish to the pan and gently toss to coat with the sweet and sour sauce.
  8. Serve the sweet and sour fish hot, garnished with sliced green onions, and alongside steamed white rice.
