Ingredients
- 4 fillets of white fish (such as cod or tilapia)
- 1/2 cup cornstarch
- 2 eggs, beaten
- 1 cup pineapple chunks
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 onion, cut into chunks
- 3/4 cup granulated sugar
- 1/2 cup rice vinegar
- 1/4 cup ketchup
- 3 tablespoons soy sauce
- 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
- Vegetable oil for frying
- Salt and pepper to taste
Instructions
- Pat the fish fillets dry with paper towels and season with salt and pepper.
- Dredge the fish in cornstarch, then dip in the beaten eggs, shaking off any excess.
- Heat vegetable oil in a large skillet over medium-high heat. Fry the fish fillets until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
- In a separate pan, combine the sugar, rice vinegar, ketchup, and soy sauce. Bring to a simmer over medium heat.
- Add the pineapple, bell peppers, and onion to the sauce, and cook for 2-3 minutes until the vegetables are slightly softened.
- Stir in the cornstarch slurry and cook until the sauce thickens.
- Add the fried fish to the pan and gently toss to coat with the sweet and sour sauce.
- Serve the sweet and sour fish hot, garnished with sliced green onions, and alongside steamed white rice.
