Ingredients

  • 500g fish fillet, cut into pieces
  • 1/2 cup cornstarch
  • 1/4 cup vegetable oil
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 onion, cut into chunks
  • 3/4 cup pineapple chunks
  • 1/4 cup rice vinegar
  • 1/4 cup ketchup
  • 3 tablespoons sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch, dissolved in 2 tablespoons water

Instructions

  1. Coat the fish fillet pieces with cornstarch.
  2. Heat the vegetable oil in a pan over medium-high heat and fry the fish fillet until golden and crispy. Remove and set aside.
  3. In the same pan, sauté the bell peppers and onion until slightly tender.
  4. Add the pineapple chunks, rice vinegar, ketchup, sugar, and soy sauce. Stir well.
  5. Pour in the cornstarch mixture and stir until the sauce thickens.
  6. Add the fried fish fillet back into the pan and toss to coat with the sweet and sour sauce.
  7. Serve hot and enjoy!
