Ingredients
- 500g fish fillet, cut into pieces
- 1/2 cup cornstarch
- 1/4 cup vegetable oil
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 onion, cut into chunks
- 3/4 cup pineapple chunks
- 1/4 cup rice vinegar
- 1/4 cup ketchup
- 3 tablespoons sugar
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch, dissolved in 2 tablespoons water
Instructions
- Coat the fish fillet pieces with cornstarch.
- Heat the vegetable oil in a pan over medium-high heat and fry the fish fillet until golden and crispy. Remove and set aside.
- In the same pan, sauté the bell peppers and onion until slightly tender.
- Add the pineapple chunks, rice vinegar, ketchup, sugar, and soy sauce. Stir well.
- Pour in the cornstarch mixture and stir until the sauce thickens.
- Add the fried fish fillet back into the pan and toss to coat with the sweet and sour sauce.
- Serve hot and enjoy!
