Sweet and Sour Mango Chutney (Aam-er Chutney)

Ingredients

  • 2 large ripe mangoes, peeled and diced
  • 1 cup sugar
  • 1/2 cup water
  • 1/4 cup white vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon red chili flakes
  • 1/2 teaspoon roasted cumin powder
  • 1/4 teaspoon ground ginger

Instructions

  1. In a saucepan, combine the diced mangoes, sugar, water, and vinegar.
  2. Place the saucepan over medium heat and bring the mixture to a boil.
  3. Reduce the heat to low and simmer for 20-25 minutes, stirring occasionally, until the mangoes are soft and the mixture thickens.
  4. Stir in the salt, red chili flakes, roasted cumin powder, and ground ginger. Cook for an additional 5 minutes.
  5. Remove from heat and let the chutney cool to room temperature.
  6. Transfer the chutney to a sterilized jar and refrigerate until ready to serve.
