Sweet and Sour Mango Pickle (Aam-er Achar)

Ingredients

  • 2 large raw green mangoes, peeled and diced
  • 1 cup sugar
  • 1/2 cup vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon panch phoron (Bengali five-spice blend)

Instructions

  1. In a large bowl, mix the diced mangoes with sugar and let it sit for 10 minutes.
  2. In a pot, combine the mangoes and sugar mixture, vinegar, salt, turmeric, red chili powder, and panch phoron.
  3. Cook over medium heat for 10-15 minutes, stirring occasionally, until the mangoes are soft and the mixture thickens.
  4. Let the pickle cool completely before transferring it to a clean, dry jar for storage.
