Ingredients
- 2 large raw green mangoes, peeled and diced
- 1 cup sugar
- 1/2 cup vinegar
- 1 teaspoon salt
- 1/2 teaspoon turmeric
- 1/2 teaspoon red chili powder
- 1/2 teaspoon panch phoron (Bengali five-spice blend)
Instructions
- In a large bowl, mix the diced mangoes with sugar and let it sit for 10 minutes.
- In a pot, combine the mangoes and sugar mixture, vinegar, salt, turmeric, red chili powder, and panch phoron.
- Cook over medium heat for 10-15 minutes, stirring occasionally, until the mangoes are soft and the mixture thickens.
- Let the pickle cool completely before transferring it to a clean, dry jar for storage.
