Sweet and Sour Pineapple Chutney (Anaros-er Chutney)

Ingredients

  • 1 ripe pineapple, peeled and diced
  • 1 cup sugar
  • 1/2 cup water
  • 1/4 cup white vinegar
  • 1 teaspoon salt
  • 1 teaspoon red chili flakes
  • 1 teaspoon roasted cumin powder
  • 1/2 teaspoon ginger, grated

Instructions

  1. In a saucepan, combine the diced pineapple, sugar, water, and vinegar.
  2. Place the saucepan over medium heat and bring the mixture to a boil.
  3. Reduce the heat to low and simmer for 15-20 minutes, stirring occasionally, until the pineapple is soft and the mixture has thickened.
  4. Stir in the salt, red chili flakes, roasted cumin powder, and grated ginger. Cook for an additional 5 minutes.
  5. Remove the chutney from the heat and let it cool to room temperature.
  6. Transfer the chutney to a sterilized jar and store it in the refrigerator.
