Sweet and Sour Pineapple Chutney (Anaros-er Chutney)
Anaros-er Chutney is a popular sweet and sour pineapple chutney from Bangladeshi cuisine. It's a delicious condiment that pairs well with savory dishes and adds a burst of flavor to any meal.
Ingredients
- 1 ripe pineapple, peeled and diced
- 1 cup sugar
- 1/2 cup water
- 1/4 cup white vinegar
- 1 teaspoon salt
- 1 teaspoon red chili flakes
- 1 teaspoon roasted cumin powder
- 1/2 teaspoon ginger, grated
Instructions
- In a saucepan, combine the diced pineapple, sugar, water, and vinegar.
- Place the saucepan over medium heat and bring the mixture to a boil.
- Reduce the heat to low and simmer for 15-20 minutes, stirring occasionally, until the pineapple is soft and the mixture has thickened.
- Stir in the salt, red chili flakes, roasted cumin powder, and grated ginger. Cook for an additional 5 minutes.
- Remove the chutney from the heat and let it cool to room temperature.
- Transfer the chutney to a sterilized jar and store it in the refrigerator.
