Sweet and Sour Sary-Moinok (Сары-Моинок)

Ingredients

  • 500g lamb, cut into cubes
  • 2 onions, finely chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 1 cup apricots, pitted and halved
  • 1 cup prunes, pitted
  • 1/2 cup vinegar
  • 1/4 cup sugar
  • 1/4 cup vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the lamb and onions, and cook until the lamb is browned and the onions are soft.
  2. Add the carrots, potatoes, apricots, and prunes to the pot. Stir well to combine.
  3. In a small bowl, mix the vinegar, sugar, salt, and pepper. Pour this mixture over the ingredients in the pot.
  4. Cover the pot and let the dish simmer for 1 hour, stirring occasionally.
  5. Once the meat and vegetables are tender, remove from heat and let it rest for a few minutes before serving.
