Ingredients

  • 500g fresh shrimp, peeled and deveined
  • 1/2 cup cornstarch
  • 2 eggs, beaten
  • 1 cup vegetable oil for frying
  • 1/2 cup granulated sugar
  • 1/4 cup rice vinegar
  • 3 tbsp ketchup
  • 1 tbsp soy sauce
  • 1/2 cup bell peppers, diced
  • 1/2 cup pineapple chunks
  • 1/4 cup green onions, chopped
  • 1 tbsp cornstarch mixed with 2 tbsp water (slurry)

Instructions

  1. Pat the shrimp dry with paper towels. Dredge the shrimp in cornstarch, dip in beaten eggs, and then coat again with cornstarch.
  2. Heat the vegetable oil in a wok or large skillet over medium-high heat. Fry the shrimp in batches until golden brown and crispy. Remove and drain on paper towels.
  3. In a small bowl, mix the sugar, rice vinegar, ketchup, and soy sauce to make the sweet and sour sauce.
  4. Heat a clean wok or skillet over medium heat. Add the sweet and sour sauce, bell peppers, and pineapple chunks. Cook until the sauce thickens slightly.
  5. Add the fried shrimp to the sauce and toss to coat. If the sauce is too thin, add the cornstarch slurry to thicken.
  6. Garnish with chopped green onions and serve hot.
