糖醋虾 (Sweet and Sour Shrimp) is a classic dish in Liaoning Cuisine, known for its perfect balance of sweet and sour flavors with tender shrimp.
Ingredients
- 500g fresh shrimp, peeled and deveined
- 1/2 cup cornstarch
- 2 eggs, beaten
- 1 cup vegetable oil for frying
- 1/2 cup granulated sugar
- 1/4 cup rice vinegar
- 3 tbsp ketchup
- 1 tbsp soy sauce
- 1/2 cup bell peppers, diced
- 1/2 cup pineapple chunks
- 1/4 cup green onions, chopped
- 1 tbsp cornstarch mixed with 2 tbsp water (slurry)
Instructions
- Pat the shrimp dry with paper towels. Dredge the shrimp in cornstarch, dip in beaten eggs, and then coat again with cornstarch.
- Heat the vegetable oil in a wok or large skillet over medium-high heat. Fry the shrimp in batches until golden brown and crispy. Remove and drain on paper towels.
- In a small bowl, mix the sugar, rice vinegar, ketchup, and soy sauce to make the sweet and sour sauce.
- Heat a clean wok or skillet over medium heat. Add the sweet and sour sauce, bell peppers, and pineapple chunks. Cook until the sauce thickens slightly.
- Add the fried shrimp to the sauce and toss to coat. If the sauce is too thin, add the cornstarch slurry to thicken.
- Garnish with chopped green onions and serve hot.
