Ingredients
- 1 pound pork, cut into bite-sized pieces
- 1 red bell pepper, cut into chunks

- 2 tablespoons rice vinegar
- 2 tablespoons sugar
- 1 tablespoon soy sauce

- 2 tablespoons cornstarch

Instructions
- In a small bowl, mix together the ketchup, rice vinegar, sugar, soy sauce, and water. Set aside.
- Season the pork with salt and pepper.
- Heat a large skillet over medium-high heat and add the pork. Cook until browned on all sides, then remove from the skillet and set aside.
- In the same skillet, add the bell peppers and onion. Cook until slightly softened.
- Return the pork to the skillet and add the pineapple chunks.

- In a small bowl, mix the cornstarch with a little water to create a slurry. Pour the slurry into the skillet and stir until the sauce thickens.
- Adjust the seasoning with salt and pepper if needed.
