Sweet And Sour Tofu

Ingredients

  • 1 block of firm tofu, cubed
  • 1 onion, sliced
  • 1 bell pepper, diced
  • 1 carrot, sliced
  • 2 cloves of garlic, minced
  • 1/4 cup tomato ketchup
  • 2 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp brown sugar
  • 1 tbsp cornstarch
  • 1/4 cup water
  • Salt to taste
  • Black pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. Press the tofu to remove excess water, then cut it into cubes.
  2. Heat vegetable oil in a pan and fry the tofu until golden brown. Set aside.
  3. In the same pan, sauté the garlic, onion, bell pepper, and carrot until they are tender.
  4. In a bowl, mix together the tomato ketchup, soy sauce, rice vinegar, brown sugar, cornstarch, water, salt, and black pepper to make the sweet and sour sauce.
  5. Pour the sauce over the sautéed vegetables and bring it to a simmer.
  6. Add the fried tofu to the pan and stir gently to coat everything with the sauce.
  7. Serve the Sweet and Sour Tofu hot with steamed rice.
