Sweet And Sour Tofu

Ingredients
- 1 block of firm tofu, cubed
- 1 onion, sliced
- 1 bell pepper, diced
- 1 carrot, sliced
- 2 cloves of garlic, minced
- 1/4 cup tomato ketchup
- 2 tbsp soy sauce
- 2 tbsp rice vinegar
- 2 tbsp brown sugar
- 1 tbsp cornstarch
- 1/4 cup water
- Salt to taste
- Black pepper to taste
- 2 tbsp vegetable oil
Instructions
- Press the tofu to remove excess water, then cut it into cubes.
- Heat vegetable oil in a pan and fry the tofu until golden brown. Set aside.
- In the same pan, sauté the garlic, onion, bell pepper, and carrot until they are tender.
- In a bowl, mix together the tomato ketchup, soy sauce, rice vinegar, brown sugar, cornstarch, water, salt, and black pepper to make the sweet and sour sauce.
- Pour the sauce over the sautéed vegetables and bring it to a simmer.
- Add the fried tofu to the pan and stir gently to coat everything with the sauce.
- Serve the Sweet and Sour Tofu hot with steamed rice.
