Sweet and Sour Tofu Stir Fry (Tiansuan Dòufu Chǎo)

Ingredients

  • 1 block of firm tofu, drained and cubed
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves of garlic, minced
  • 1/2 cup pineapple chunks
  • 1/4 cup sweet and sour sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Press the tofu to remove excess moisture, then cut into cubes.
  2. In a small bowl, whisk together the sweet and sour sauce, soy sauce, rice vinegar, and cornstarch to make the sauce. Set aside.
  3. Heat the vegetable oil in a large pan or wok over medium-high heat. Add the tofu cubes and cook until golden brown on all sides. Remove from the pan and set aside.
  4. In the same pan, add a little more oil if needed and sauté the garlic until fragrant.
  5. Add the sliced bell peppers, onion, and pineapple chunks to the pan. Stir-fry until the vegetables are tender-crisp.
  6. Return the tofu to the pan and pour the sweet and sour sauce over the tofu and vegetables. Stir gently to coat everything in the sauce.
  7. Cook for a few more minutes until the sauce thickens and everything is heated through.
  8. Season with salt and pepper to taste.
  9. Serve the Tiansuan Dòufu Chǎo hot over steamed rice.
