Sweet and Sour Tomato Chutney (Tamatar-er Chutney)

Ingredients

  • 6 ripe tomatoes, chopped
  • 1 cup jaggery, grated
  • 1/2 cup white vinegar
  • 1 teaspoon ginger, grated
  • 1 teaspoon panch phoron (Bengali five-spice blend)
  • 1 teaspoon red chili flakes
  • 1/2 teaspoon turmeric powder
  • Salt to taste

Instructions

  1. In a saucepan, combine the chopped tomatoes, grated jaggery, white vinegar, grated ginger, panch phoron, red chili flakes, turmeric powder, and salt.
  2. Cook the mixture over medium heat, stirring occasionally, until the tomatoes break down and the chutney thickens, about 20 minutes.
  3. Remove from heat and let the chutney cool to room temperature.
  4. Transfer the chutney to a clean, airtight jar and store it in the refrigerator.
