Sweet and Sour Tomato Chutney (Tamatar-er Chutney)
Tamatar-er Chutney, also known as Sweet and Sour Tomato Chutney, is a popular condiment in Bangladeshi cuisine. It is a delicious blend of tangy tomatoes, aromatic spices, and sweet jaggery, making it a perfect accompaniment to various dishes.
Ingredients
- 6 ripe tomatoes, chopped
- 1 cup jaggery, grated
- 1/2 cup white vinegar
- 1 teaspoon ginger, grated
- 1 teaspoon panch phoron (Bengali five-spice blend)
- 1 teaspoon red chili flakes
- 1/2 teaspoon turmeric powder
- Salt to taste
Instructions
- In a saucepan, combine the chopped tomatoes, grated jaggery, white vinegar, grated ginger, panch phoron, red chili flakes, turmeric powder, and salt.
- Cook the mixture over medium heat, stirring occasionally, until the tomatoes break down and the chutney thickens, about 20 minutes.
- Remove from heat and let the chutney cool to room temperature.
- Transfer the chutney to a clean, airtight jar and store it in the refrigerator.
