Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple chunks
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon sriracha sauce
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1/2 teaspoon red pepper flakes
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix together the soy sauce, honey, sriracha sauce, garlic, ginger, and red pepper flakes to make the marinade.
  2. Season the chicken breasts with salt and pepper, then place them in a resealable plastic bag with the marinade. Let it marinate in the refrigerator for at least 30 minutes.
  3. Heat the vegetable oil in a large skillet over medium-high heat. Add the marinated chicken breasts and cook for 6-7 minutes on each side, or until fully cooked.
  4. Remove the chicken from the skillet and set aside. In the same skillet, add the pineapple chunks and cook for 2-3 minutes until they are slightly caramelized.
  5. Return the chicken to the skillet, coating it with the pineapple and sauce. Cook for an additional 2-3 minutes to let the flavors meld together.
  6. Serve the Sweet and Spicy Pineapple Chicken hot, garnished with chopped cilantro or green onions if desired.
