मिठो बाजी (Sweet Baji) is a traditional Newari sweet dish that is popular during festivals and special occasions. It is made with rice flakes, jaggery, and a variety of nuts and spices, creating a delicious and aromatic treat.
Ingredients
- Rice flakes - 2 cups
- Jaggery - 1 cup, grated
- Coconut - 1/2 cup, shredded
- Almonds - 1/4 cup, chopped
- Cashews - 1/4 cup, chopped
- Raisins - 1/4 cup
- Ghee - 2 tbsp
- Cardamom powder - 1 tsp
- Cinnamon powder - 1/2 tsp
- Water - 1/2 cup
Instructions
- In a pan, heat ghee and roast the rice flakes until they turn crispy.
- Add the jaggery and water to the pan and cook until the jaggery melts and forms a syrup.
- Stir in the coconut, almonds, cashews, raisins, cardamom powder, and cinnamon powder. Mix well.
- Cook for a few more minutes until everything is well combined and the mixture becomes sticky.
- Remove from heat and let it cool for a few minutes.
- Shape the mixture into small round balls or flatten them into patties as per your preference.
