Sweet Bread (romanian Cozonac)

Ingredients

  • 4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 cup milk
  • 2 eggs
  • 1/4 cup warm water
  • 1 tablespoon active dry yeast
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts
  • 1/2 cup cocoa powder
  • 1/2 cup powdered sugar

Instructions

  1. In a small bowl, dissolve the yeast in warm water and let it sit for 5 minutes until foamy.
  2. In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture, sugar, melted butter, milk, eggs, and vanilla extract. Mix until a dough forms.
  3. Knead the dough on a floured surface for 10-15 minutes, or until it becomes smooth and elastic. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour, or until doubled in size.
  4. In a separate bowl, mix together the chopped walnuts, cocoa powder, and powdered sugar to make the filling.
  5. Punch down the risen dough and divide it in half. Roll out each half into a rectangle and spread the nut filling evenly over the dough. Roll up the dough tightly, tucking in the ends, and place each loaf in a greased loaf pan.
  6. Cover the pans with a kitchen towel and let the loaves rise for an additional 30 minutes.
  7. Preheat the oven to 350°F (175°C). Bake the loaves for 30-35 minutes, or until golden brown. Let them cool before slicing and serving.
