Ingredients
- 1 cup all-purpose flour
- 2 eggs
- 1 cup milk
- 1/4 cup sugar
- 1/2 tsp vanilla extract
- 1/4 tsp salt
- 1 cup sweet cheese (such as ricotta or farmer's cheese)
- 2 tbsp butter, for cooking
Instructions
- In a large bowl, whisk together the flour, eggs, milk, sugar, vanilla extract, and salt until smooth.
- In a separate bowl, mix the sweet cheese until smooth.
- Heat a non-stick skillet over medium heat and add a small amount of butter.
- Pour a small ladleful of the pancake batter into the skillet and swirl to spread it out into a thin, even layer.
- Cook for 2-3 minutes, then flip the pancake and cook for an additional 2-3 minutes.
- Remove the pancake from the skillet and place it on a plate.
- Spread a spoonful of the sweet cheese mixture over the pancake, then fold it in half and then in half again to form a triangle.
- Repeat with the remaining batter and sweet cheese mixture.
- Serve the sweet cheese pancakes warm, dusted with powdered sugar if desired.
