Ingredients
- 4 cups fresh or frozen corn kernels
- 1 cup whole milk
- 1/2 cup sugar
- 3 eggs
- 1/4 cup butter, melted
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon salt
Instructions
- In a blender, combine the corn kernels and milk. Blend until smooth.
- In a large bowl, whisk together the sugar and eggs until well combined.
- Gradually pour the corn mixture into the bowl with the sugar and eggs, stirring constantly.
- Add the melted butter, vanilla extract, ground cinnamon, and salt to the mixture. Stir until everything is well incorporated.
- Pour the mixture into a greased baking dish or individual ramekins.
- Place the baking dish or ramekins in a large pot and fill the pot with enough water to reach halfway up the sides of the baking dish or ramekins.
- Cover the pot and let the pudding steam on the stovetop for 45 minutes, or until set.
- Remove the pudding from the pot and let it cool slightly before serving.
