Ingredients
- 1 ripe durian, flesh removed and seeds discarded
- 400ml coconut milk
- 150g palm sugar, grated
- 1 pandan leaf, tied into a knot
- Pinch of salt
Instructions
- In a pot, combine the coconut milk, palm sugar, pandan leaf, and salt. Bring to a gentle simmer over medium heat, stirring occasionally.
- Add the durian flesh to the pot and continue to simmer for 10-15 minutes, stirring gently to combine the ingredients.
- Once the mixture has thickened slightly, remove the pandan leaf and discard.
- Transfer the pengat durian to serving bowls and serve warm or chilled.
