Ingredients

  • 1 ripe durian, flesh removed and seeds discarded
  • 400ml coconut milk
  • 150g palm sugar, grated
  • 1 pandan leaf, tied into a knot
  • Pinch of salt

Instructions

  1. In a pot, combine the coconut milk, palm sugar, pandan leaf, and salt. Bring to a gentle simmer over medium heat, stirring occasionally.
  2. Add the durian flesh to the pot and continue to simmer for 10-15 minutes, stirring gently to combine the ingredients.
  3. Once the mixture has thickened slightly, remove the pandan leaf and discard.
  4. Transfer the pengat durian to serving bowls and serve warm or chilled.
