Sweet Juju Dhau (मिठो जुजु धौं)

Ingredients

  • 1 liter full-fat milk
  • 1/2 cup sugar
  • 1/4 teaspoon cardamom powder
  • 1/4 cup plain yogurt (as a starter culture)

Instructions

  1. In a heavy-bottomed pan, bring the milk to a boil over medium heat, stirring constantly to prevent it from sticking to the bottom of the pan.
  2. Once the milk comes to a boil, reduce the heat to low and simmer for 2 hours, stirring occasionally, until the milk reduces to half its original volume.
  3. Add sugar and cardamom powder to the reduced milk and continue to simmer for another 1 hour, stirring occasionally.
  4. Allow the sweetened milk to cool to lukewarm temperature.
  5. Once the milk has cooled, add the plain yogurt as a starter culture and mix well.
  6. Transfer the mixture to a clean, airtight container and keep it in a warm place for 8-12 hours to set into thick, creamy yogurt.
  7. Once set, refrigerate the sweet yogurt for at least 2 hours before serving.
