Ingredients
- 1 liter full-fat milk
- 1/2 cup sugar
- 1/4 teaspoon cardamom powder
- 1/4 cup plain yogurt (as a starter culture)
Instructions
- In a heavy-bottomed pan, bring the milk to a boil over medium heat, stirring constantly to prevent it from sticking to the bottom of the pan.
- Once the milk comes to a boil, reduce the heat to low and simmer for 2 hours, stirring occasionally, until the milk reduces to half its original volume.
- Add sugar and cardamom powder to the reduced milk and continue to simmer for another 1 hour, stirring occasionally.
- Allow the sweetened milk to cool to lukewarm temperature.
- Once the milk has cooled, add the plain yogurt as a starter culture and mix well.
- Transfer the mixture to a clean, airtight container and keep it in a warm place for 8-12 hours to set into thick, creamy yogurt.
- Once set, refrigerate the sweet yogurt for at least 2 hours before serving.
