Sweet Milk Dumplings (bhojpuri Kheer Mohan)

Ingredients

  • 1 liter whole milk
  • 1/2 cup sugar
  • 1/2 teaspoon cardamom powder
  • 1/4 cup all-purpose flour
  • 2 tablespoons ghee (clarified butter)

Instructions

  1. In a large heavy-bottomed pan, bring the milk to a boil over medium heat. Stir occasionally to prevent the milk from sticking to the bottom of the pan.
  2. Once the milk comes to a boil, reduce the heat to low and simmer for 15-20 minutes, stirring frequently, until the milk reduces to about half its original quantity.
  3. While the milk is simmering, prepare the dumplings. In a bowl, mix the all-purpose flour with a little water to form a smooth dough. Divide the dough into small balls and set aside.
  4. Once the milk has reduced, add the sugar and cardamom powder, and stir until the sugar is completely dissolved.
  5. In a separate pan, heat the ghee over medium heat. Add the flour dumplings and fry until they are golden brown.
  6. Transfer the fried dumplings to the milk mixture and let them simmer for another 5-7 minutes, allowing the flavors to meld together.
  7. Remove from heat and let the sweet milk dumplings cool for a few minutes before serving.
