Sweet Pilaf (mishti Pulao Royale)

Ingredients

  • 2 cups basmati rice
  • 4 cups water
  • 1/2 cup ghee (clarified butter)
  • 1 cup mixed nuts (cashews, almonds, raisins)
  • 1 cup mixed dried fruits (apricots, dates, figs)
  • 1 cinnamon stick
  • 4-5 green cardamom pods
  • 1/2 cup sugar
  • 1/4 teaspoon saffron strands
  • 1/4 teaspoon nutmeg powder
  • 1/4 teaspoon rose water
  • Salt to taste

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
  2. In a large pot, heat the ghee over medium heat. Add the mixed nuts and dried fruits, and sauté until the nuts are golden and the fruits are slightly caramelized. Remove the nuts and fruits from the pot and set aside.
  3. In the same pot, add the cinnamon stick and cardamom pods. Sauté for a minute to release their aroma.
  4. Add the drained rice to the pot and sauté for 2-3 minutes, stirring gently to coat the rice with the ghee and spices.
  5. Pour in the water, add the sugar, saffron strands, nutmeg powder, and a pinch of salt. Bring to a boil, then reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  6. Once the rice is cooked, gently fluff it with a fork. Sprinkle rose water over the rice and mix gently.
  7. Transfer the sweet pilaf to a serving dish and garnish with the sautéed nuts and dried fruits.
