Ingredients
- 2 ripe sweet plantains, peeled and sliced
- 1 can (15 oz) black beans, drained and rinsed
- 8 small flour tortillas
- 2 cups shredded cheese (such as mozzarella or cheddar)
- 1 small red onion, thinly sliced
- 1 avocado, sliced
- 1/4 cup chopped cilantro
- Salt and pepper to taste
- Vegetable oil for cooking
Instructions
- Heat a non-stick skillet over medium heat.
- Place the sliced plantains in the skillet and cook for 2-3 minutes on each side until golden brown. Remove from the skillet and set aside.
- In the same skillet, add the black beans and cook for 2-3 minutes until heated through. Remove from the skillet and set aside.
- Place a tortilla in the skillet and sprinkle a layer of cheese on one half of the tortilla.
- Top the cheese with a layer of cooked plantains, black beans, red onion, avocado, and cilantro. Season with salt and pepper.
- Fold the tortilla in half to cover the filling and press down gently with a spatula.
- Cook for 2-3 minutes on each side until the tortilla is crispy and the cheese is melted.
- Repeat with the remaining tortillas and filling ingredients.
- Serve the quesadillas hot, cut into wedges, and enjoy!
