Sweet Plantain Pancakes (Panqueques de Plátano Maduro)

Ingredients

  • 2 ripe plantains, peeled and mashed
  • 2 eggs
  • 1/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup milk
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • Butter or oil for cooking

Instructions

  1. In a bowl, mix together the mashed plantains, eggs, flour, baking powder, salt, milk, sugar, and vanilla extract until well combined.
  2. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  3. Pour 1/4 cup of the batter onto the skillet for each pancake.
  4. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for an additional 2-3 minutes until golden brown.
  5. Repeat with the remaining batter.
