Ingredients
- 2 ripe plantains, peeled and mashed
- 2 eggs
- 1/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup milk
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
- Butter or oil for cooking
Instructions
- In a bowl, mix together the mashed plantains, eggs, flour, baking powder, salt, milk, sugar, and vanilla extract until well combined.
- Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
- Pour 1/4 cup of the batter onto the skillet for each pancake.
- Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for an additional 2-3 minutes until golden brown.
- Repeat with the remaining batter.
