Ingredients
- 1 kg pork belly, thinly sliced
- 1 cup pineapple juice
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- 1 head garlic, minced
- 1 onion, chopped
- 3 pieces star anise
- 1 teaspoon whole peppercorns
- 2 bay leaves
- 1 cup water
Instructions
- In a bowl, combine pineapple juice, soy sauce, brown sugar, garlic, and onion. Mix well.
- Add the sliced pork belly to the marinade and ensure that the meat is well-coated. Marinate for at least 2 hours or overnight in the refrigerator.
- Heat a cooking pot and transfer the marinated pork along with the marinade.
- Add water, whole peppercorns, bay leaves, and star anise. Bring to a boil and then simmer for 40 minutes to 1 hour or until the pork is tender.
- Once the pork is tender, increase the heat to medium to high to reduce the sauce until it thickens.
- Serve hot and enjoy with steamed rice.
