Sweet Pork Tocino (tocinong Baboy Humba)

Ingredients

  • 1 kg pork belly, thinly sliced
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1 head garlic, minced
  • 1 onion, chopped
  • 3 pieces star anise
  • 1 teaspoon whole peppercorns
  • 2 bay leaves
  • 1 cup water

Instructions

  1. In a bowl, combine pineapple juice, soy sauce, brown sugar, garlic, and onion. Mix well.
  2. Add the sliced pork belly to the marinade and ensure that the meat is well-coated. Marinate for at least 2 hours or overnight in the refrigerator.
  3. Heat a cooking pot and transfer the marinated pork along with the marinade.
  4. Add water, whole peppercorns, bay leaves, and star anise. Bring to a boil and then simmer for 40 minutes to 1 hour or until the pork is tender.
  5. Once the pork is tender, increase the heat to medium to high to reduce the sauce until it thickens.
  6. Serve hot and enjoy with steamed rice.
