These Sweet Potato and Black Bean Enchiladas are a delicious and hearty dish that combines the flavors of Saint Helenian Cuisine with a Mexican twist. Ingredients
- 2 large sweet potatoes, peeled and diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 small red onion, diced
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 8 small corn tortillas
- 1 1/2 cups enchilada sauce
- 1 cup shredded vegan cheese
- Fresh cilantro, for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat some oil over medium heat. Add the sweet potatoes and cook until they start to soften, about 8 minutes.
- Add the black beans, bell pepper, onion, garlic, cumin, chili powder, and smoked paprika to the skillet. Cook for another 5 minutes, stirring occasionally. Season with salt and pepper.
- Warm the tortillas in the microwave for a few seconds to make them pliable.
- Spread a small amount of enchilada sauce on the bottom of a baking dish.
- Fill each tortilla with the sweet potato and black bean mixture, roll it up, and place it seam side down in the baking dish.
- Pour the remaining enchilada sauce over the top of the enchiladas and sprinkle with vegan cheese.
- Bake for 20 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh cilantro before serving.
