Sweet Potato And Black Bean Enchiladas

Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 small red onion, diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 1/2 cups enchilada sauce
  • 1 cup shredded vegan cheese
  • Fresh cilantro, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat some oil over medium heat. Add the sweet potatoes and cook until they start to soften, about 8 minutes.
  3. Add the black beans, bell pepper, onion, garlic, cumin, chili powder, and smoked paprika to the skillet. Cook for another 5 minutes, stirring occasionally. Season with salt and pepper.
  4. Warm the tortillas in the microwave for a few seconds to make them pliable.
  5. Spread a small amount of enchilada sauce on the bottom of a baking dish.
  6. Fill each tortilla with the sweet potato and black bean mixture, roll it up, and place it seam side down in the baking dish.
  7. Pour the remaining enchilada sauce over the top of the enchiladas and sprinkle with vegan cheese.
  8. Bake for 20 minutes, or until the cheese is melted and bubbly.
  9. Garnish with fresh cilantro before serving.
