Sweet Potato and Black Bean Soup (Ibihaza n'Imigati)

Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
  2. Add the diced sweet potatoes, black beans, ground cumin, and smoked paprika to the pot. Stir to combine the ingredients.
  3. Pour in the vegetable broth and bring the soup to a boil. Reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the sweet potatoes are tender.
  4. Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth. Season with salt and pepper to taste.
  5. Serve the Ibihaza n'Imigati hot, garnished with a dollop of yogurt or a sprinkle of fresh herbs if desired.
