Sweet Potato and Black Bean Soup (Ibihaza n'Imigati)

Ingredients
- 2 large sweet potatoes, peeled and diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 4 cups vegetable broth
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
- Add the diced sweet potatoes, black beans, ground cumin, and smoked paprika to the pot. Stir to combine the ingredients.
- Pour in the vegetable broth and bring the soup to a boil. Reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the sweet potatoes are tender.
- Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth. Season with salt and pepper to taste.
- Serve the Ibihaza n'Imigati hot, garnished with a dollop of yogurt or a sprinkle of fresh herbs if desired.
