Ingredients
- 2 large sweet potatoes, peeled and diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 tsp ground cumin
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onion, garlic, and bell pepper. Sauté until the vegetables are softened.
- Add the sweet potatoes, black beans, diced tomatoes, vegetable broth, cumin, paprika, salt, and pepper. Stir to combine.
- Bring the stew to a boil, then reduce the heat and let it simmer for 30 minutes, or until the sweet potatoes are tender.
- Adjust the seasoning if needed, then serve the stew hot.
