Ingredients
- 2 large sweet potatoes, peeled and diced
- 1 cup dried black-eyed peas, soaked overnight and drained
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and red bell pepper, and sauté until the vegetables are softened.
- Add the sweet potatoes, black-eyed peas, diced tomatoes, vegetable broth, paprika, and cayenne pepper to the pot. Season with salt and pepper.
- Bring the stew to a boil, then reduce the heat and let it simmer for 45-50 minutes, or until the sweet potatoes and black-eyed peas are tender.
