Sweet Potato And Coconut Curry
This Sweet Potato and Coconut Curry is a delicious and comforting dish from Samoan cuisine that is perfect for a cozy dinner at home.
Ingredients
- 2 large sweet potatoes, peeled and cubed
- 1 can (14 oz) coconut milk
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 cup vegetable broth
- 2 tablespoons curry powder
- 1 teaspoon turmeric
- Salt and pepper to taste
- 2 tablespoons coconut oil
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the coconut oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
- Add the sweet potatoes and red bell pepper to the pot, and cook for 5 minutes, stirring occasionally.
