Sweet Potato and Lentil Stew (Mafé)

Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 1 cup lentils, rinsed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cayenne pepper
  • 1 cup smooth peanut butter
  • 4 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onion and garlic until softened.
  2. Add the sweet potatoes, lentils, cumin, and cayenne pepper. Stir to combine.
  3. Pour in the vegetable broth and bring the mixture to a boil.
  4. Reduce the heat, cover, and simmer for 30 minutes, or until the sweet potatoes and lentils are tender.
  5. Stir in the peanut butter until well incorporated, and season with salt and pepper to taste.
  6. Simmer for an additional 15 minutes to allow the flavors to meld together.
  7. Serve the Mafé hot, garnished with chopped peanuts if desired.
