Sweet Potato and Lentil Stew (Mafé)
Mafé is a traditional Mauritanian stew made with sweet potatoes and lentils, simmered in a rich and flavorful peanut sauce. This hearty and comforting dish is perfect for a cozy dinner on a chilly evening.
Ingredients
- 2 large sweet potatoes, peeled and cubed
- 1 cup lentils, rinsed
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon cayenne pepper
- 1 cup smooth peanut butter
- 4 cups vegetable broth
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion and garlic until softened.
- Add the sweet potatoes, lentils, cumin, and cayenne pepper. Stir to combine.
- Pour in the vegetable broth and bring the mixture to a boil.
- Reduce the heat, cover, and simmer for 30 minutes, or until the sweet potatoes and lentils are tender.
- Stir in the peanut butter until well incorporated, and season with salt and pepper to taste.
- Simmer for an additional 15 minutes to allow the flavors to meld together.
- Serve the Mafé hot, garnished with chopped peanuts if desired.
