Ingredients
- 2 large sweet potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup peanut butter
- 6 cups vegetable broth

Instructions
- In a large pot, sauté the onion and garlic until softened.
- Add the sweet potatoes and vegetable broth, then bring to a boil.
- Reduce heat and simmer for 20-25 minutes, or until the sweet potatoes are tender.
